Acetum is based in Cavezzo, in the historical Motta Cellars building. Built in 1906, the cellars were totally restructured by Acetum to host their vinegar production. The aging areas have enough barrels and casks of different sizes and types of wood to store up to 3 million liters of Balsamico. Acetum introduced Balsamic Vinegar to the US market back in the 1970s, a time at which this sweet, syrupy condiment was unfamiliar even to Italian consumers outside of Modena, the original area of its production.
